Apple & Cinnamon Pie

Apples may very depending on the best available. We cook these out in a pan with ground cinnamon and sugar. The sugar used is a mix of caster sugar and dark brown sugar.
Cooked out so it resembles almost a half attempt at a chunky chutney. So that when we add it to the pie case and bake there still slight bite to the apples when eaten.
This for me provides the best flavour from the apples aswell as providing a nice testure.
